I am entering the #MashedAndMelted Contest. Only 4-hours left before the deadline so here it goes.
4 – Large potatoes
8 – Oz. Philadelphia original cream cheese
5 – Oz. chopped spinach
1/2 – medium onion
1 – clove of garlic
1 – teaspoon of salt
2 – teaspoons of oregano
1 – cup of pineapple chuncks
14 – 18 Large shrimp
1/2 – cup chopped green bell pepper
1/2 – cup chopped red bell pepper
8 – Oz. Heinz sauce
150 – g. Four cheese Mozzarella, Gouda, Cheddar and Parmesan
Optional: Tabasco, Parmesan cheese
Make this special dish:
Cook potatoes in boiling water in large saucepan 15 to 20 min. or until tender.
Meanwhile, steam spinach, garlic, onions, peppers, pineapple and shrimp. Drain the potatoes. mash the potatoes in a large mixing bowl. Drain spinach and add to the mashed potatoes. Add soft cream cheese, salt and oregano and mix very well until a thick like spread. Add to a baking dish. Make sure it is about 1-inch thick max. Add Heinz sauce, shrimp, pineapple and peppers. Cover all completely with the Four cheese. Bake 8-15 minutes depending on size and shape of baking pan. Bake a little longer for a golden brown chewy cheese topping.
